In Italy, early harvest olive oil is called Novello. It's more than olive oil; it's a celebration of a new season and a tradition that's brought families together for generations. Yes! Because it's unfiltered, the clarity and colour vary depending on when in the season you order. Why?

Novello is stored in temperature-controlled stainless steel tanks and bottled on-demand, not at the time of pressing. As a natural unfiltered extra virgin olive oil, it continues to evolve as gravity settles the fruit particles to the bottom of the tanks. When you order, we rack the oil, decanting from above the sediment line into a bottle.

The advantage of this method is you receive a robust, high-polyphenol extra virgin olive oil that keeps its fine micro-sediment, without the heavier particles you'd get if it were bottled straight after pressing. And because it's kept in tanks up until you order, it stays untouched by light, air and heat for as long as possible.

Each bottle may look a little different, proof you're enjoying authentic, unfiltered olive oil as nature intended.

Novello is an exceptional drizzling EVOO that enhances a wide variety of dishes. Uses include finishing a main course, dressing a salad, drizzling over grilled vegetables, or enjoying with a slice of ciabatta.

Storage: Store in a cool and dry place away from heat and sunlight – 2 year shelf life. If purchased with a Novello Pourer, be sure to remove the plastic insert out of the bottle first before inserting the pourer.

Domestic Shipping: Orders are shipped via your chosen carrier with a tracking number. The exception is PO Box deliveries, which go via Australia Post only.

International Shipping: All orders are shipped with Australia post with tracking. Shipping costs are calculauted at checkout based on your order weight and location.
