Novello 2024 First-Harvest Extra Virgin Olive Oil

Novello (meaning ‘the new oil’) is made with the freshest fruit of the new season harvest. The under-ripe olives are cold-pressed within 8 hours of picking, and the oil is bottled by our team on demand. This means we can keep the extra virgin olive oil in an air-tight, stainless steel, temperature controlled tank right up until you place an order, and your Novello is untouched by light, air, and heat, and packed by hand by our team – not a machine.

Our Novello has naturally settled while it’s resting in the tank meaning all the suspended fruit particles have been removed so you’ll receive 100% naturally filtered oil with no sediment.

Harvest & Tasting Notes: Our 2024 Novello is made using a blend of Koroneiki, Frantoio & Leccino olives. The herbaceous green tomato leaf aroma, a signature characteristic of our Novello, is more pronounced, and provides a tantalising prelude to the rich and balanced flavours that follow. A balanced flavour profile, creamy texture, harmonious bitterness and pungency with a long finish.
